Ingredients:

  • 2 cups jasmine rice
  • 1 cup coconut milk
  • 2 pandan leaves, knotted
  • 1 tsp salt
  • 4 boiled eggs
  • 1 cup roasted peanuts
  • 1 cup fried anchovies (ikan bilis)
  • Sambal (spicy chili paste)

Instructions:

  1. Prepare the Rice:
    • Rinse the jasmine rice under cold water until the water runs clear.
    • In a rice cooker, combine the rinsed rice, coconut milk, pandan leaves, and salt.
    • Add water according to your rice cooker’s instructions (usually 1:1 ratio with the rice).
    • Cook the rice until done and fragrant.
  2. Boil the Eggs:
    • Boil the eggs for about 10-12 minutes until hard-boiled.
    • Cool, peel, and set them aside.
  3. Prepare the Accompaniments:
    • Roast the peanuts until golden brown.
    • Fry the anchovies until crispy.
    • Prepare the sambal or use a store-bought version for convenience.
  4. Assemble the Nasi Lemak:
    • Serve a scoop of coconut rice on a plate.
    • Add a boiled egg, roasted peanuts, fried anchovies, and a generous spoonful of sambal on the side.
    • Garnish with cucumber slices and fried chicken or beef rendang if desired.
  5. Enjoy:
    • Mix the rice with the accompaniments and enjoy the delicious and aromatic flavors of this classic Malaysian dish.
