Cauliflower omelette

Ingredients
- 500 g cauliflower cut into small trees
- two soup spoons Olive oil
- two garlic cloves chopped
- 6 eggs.
- A pinch nutmeg.
- Salt to taste.
Preparing the spices

Steam the cauliflower. If it is done in a steamer, bring the water to a boil, place the basket, add the cauliflower and cover. If it is done in the microwave, put the cauliflower in the silicone steamer, close it and cook on full power for 3-4 minutes. Check if it is tender and cook it a minute more if necessary.

Heat the olive oil in a frying pan and fry the garlic for one minute. Add the steamed cauliflower, salt to taste and sauté over high heat, letting it brown slightly. Remove from heat and reserve.

Beat the eggs and add the cauliflower, a pinch of nutmeg and salt to taste. When it’s hot, add the egg and cauliflower mixture and cook 4-5 minutes over medium-low heat. Flip the omelette with the help of a plate and cook another 4-5 minutes.

Let it rest for a few minutes before serving.
