Spaghetti with tomato and tuna sauce

  • 280 g of spaghetti.
  • 2 cans of natural tuna.
  • 2 eggs.
  • 1/2 little onion.
  • 1 garlic clove
  • 1 can of crushed tomato.
  • Oil, salt, sugar, pepper and parsley.

Preparing the spices

Bring salted water to a boil and cook the spaghetti according to the manufacturer’s instructions.
Chop the onion and garlic clove. In a frying pan, put 2 tablespoons of olive oil and when it is hot add the onion and garlic. Sauté until the onion is transparent.
Add the crushed tomato, put a dessert teaspoon of sugar and leave for about 20-30 minutes over low heat until it reduces by half.
Drain the tuna well and add it to the tomato. Stir so that it crumbles and is evenly incorporated. Lower the fire.
Beat the two eggs and add them to the tomato and tuna sauce. With low heat, stir so that the egg is incorporated into all the sauce and set little by little. It is important that the temperature is low, otherwise the egg will curdle quickly.
When the sauce has acquired a creamy consistency and the color of the tomato has changed from the characteristic reddish tone to orange, turn off the heat. Season with salt and pepper.
Mix the sauce with the well drained pasta, sprinkle with a little chopped parsley
