Spicy Halal Chicken Curry Recipe

Ingredients
1 lb boneless, skinless chicken breasts
2 tbsp vegetable oil
1 onion, finely chopped
2 cloves garlic, minced
1 tbsp grated ginger
1 tsp ground cumin
1 tsp ground coriander
1/2 tsp turmeric powder
1/2 tsp paprika
1/2 tsp cayenne pepper
1 can diced tomatoes
1/2 cup chicken broth
Salt and pepper to taste
Chopped cilantro for garnish
Instructions:
- Heat the vegetable oil in a large saucepan over medium heat. Add the onions, garlic, and ginger and cook until the onions are soft and translucent.
- Add the chicken and cook until browned on all sides.
- Add the cumin, coriander, turmeric, paprika, and cayenne pepper to the pan and stir until the chicken is coated in the spices.
- Add the diced tomatoes and chicken broth to the pan and stir to combine. Bring the mixture to a boil, then reduce the heat and let it simmer for 15-20 minutes, or until the chicken is cooked through.
- Season the curry with salt and pepper to taste.
- Serve the spicy halal chicken curry hot, garnished with chopped cilantro.
