Falafel Recipe
Ingredients:
1 cup dried chickpeas, soaked overnight
1/2 cup fresh parsley, chopped
1/2 cup fresh cilantro, chopped
1 small onion, chopped
3 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon ground coriander
1/4 teaspoon cayenne pepper
Salt and black pepper to taste
1 teaspoon baking powder
4-6 tablespoons all-purpose flour
Vegetable oil for frying
Instructions:
Drain and rinse the soaked chickpeas.
In a food processor, combine chickpeas, parsley, cilantro, onion, garlic, cumin, coriander, cayenne pepper, salt, and black pepper. Pulse until well combined.
Sprinkle baking powder and 4 tablespoons of flour over the mixture. Pulse until it forms a coarse meal. Add more flour if needed.
Shape the mixture into small patties or balls.
Heat vegetable oil in a deep pan over medium-high heat.
Fry falafel until they are golden brown and crispy, about 3-4 minutes per side.
Drain on paper towels before serving.
Serve falafel with pita bread, tahini sauce, and fresh vegetables.
